Colours of Health

Bell peppers are packed with nutrients and are excellent antioxidants.  They are a good source of vitamin C, thiamine, vitaminB6, beta carotene, and folic acid.  Studies have shown red bell peppers have significantly higher levels of nutrients than green peppers. Possibly due to their vitamin C and beta carotene content, bell peppers have been shown to be protective against cataracts.

Tomatoes are also excellent antioxidants and provide an excellent amount of vitamin C and beta-carotene. They are also a good source of the mineral manganese and vitamin E. They protect the bones, liver, kidneys and bloodstream.
