Enzyme Activated Avocado and Cucumber Spread

Avocados are packed with anti-oxidants and contain alpha-carotene, beta-carotene and Vitamin E. They contain soluble and insoluble fibre which helps in digestion. Soluble fibre slows the breakdown of carbohydrates so it gives you a feeling of being full. Cucumbers are a rich source of antioxidant nutrients including vitamin C, beta-carotene and manganese. They contain vitamin A, niacin, folate, vitaminB6, vitamin E, vitamin K. Fresh extracts from cucumbers have been shown to have both antioxidant and anti-inflammatory properties. They also contain small amounts of minerals such as calcium, magnesium, iron, zinc, potassium, phosphorous, copper, manganese, fluoride, selenium and silica.

Serves 2
1 organic avocado
1 small organic cucumber

1. Cut avocado and cucumber in to pieces.
2. Blend the avocado and cucumber using a hand blender.
3. Add salt and pepper for added flavor.
4. voilá.
Tastes great with gluten-free buns!
