Glorious Greens

Green vegetables are rich sources of calcium, magnesium, potassium, iron, beta-carotene, vitamin B-complex, vitamin-C, vitamin A, and vitamin K. Sprouting mung beans produces minerals, enzymes and vitamins, in a form easily absorbed the body. The sprouting process makes Vitamin C available which is not found in the seed. Mung beans have 13g of vitamin C in each cup!
