Gluten Free Coconut Blueberry Muffins

If you decide to go on a gluten free diet make sure you include gluten-free whole grains such as brown rice and quinoa. These will provide you with the fibre, vitamins, minerals and antioxidants that you are removing from your diet if you decide to go gluten- free. It is important to understand what effects gluten does have on the body. Research indicates you do not need to have coeliac disease for gluten to negatively impact your health, such as, something known as gluten sensitivity. A review paper in The New England Journal of Medicine listed 55 diseases that included inflammatory bowel disease, rheumatoid arthritis, osteoporosis and autism as diseases that can be caused by eating gluten. Gluten sensitivity can create inflammation across all organ systems including the brain, joints, digestive tract and heart.
