Leeks Gone Wild

We tried wild leeks for the first time today and they taste amazing! Leeks are an excellent source of vitamin A and anti-inflammatory vitamin K. They are a very good source of bone-building manganese as well as heart-healthy vitamin C, folate and vitamin B6. They have a strong aroma and produce a velvety texture like fried green onions.
Below: simple to make Wild Leek and Potato Soup. Ingredients: Homemade happy chicken broth, organic wild leeks, organic yams, organic red potato, organic garlic, organic coconut oil and sea salt and pepper for added flavor.
