A Happy Quiche

Ever since we tried out the green pea flour, we have been incorporating it in almost all our recipes! Green pea flour is a gluten free flour that is high in protein. Whether we use 1tbsp or 1/2 cup of green pea flour, we have not been disappointed with the outcome of flavor. Today we decided to make a green pea crust for our mini quiches. The results were yummy as usual! (see recipe below)

15 minutes later:

Simple Quiche Recipe
Makes 4 small quiches
For Pastry 
∙ 1/4 cup of organic green pea flour
∙ 1/4 cup of organic brown rice flour
∙ 1/2 tsp of salt
∙ 1/4 cup of organic coconut oil (melted or at room temperature)

For Filling/topping
2 tbsp of diced organic zucchini
2 tbsp of diced organic leeks
2 organic asparagus shoot (steamed)
2-4 organic garlic cloves
1 small piece of organic ginger (finely cut into small pieces)
4 happy free range chicken eggs
sea salt
organic pepper

1. Preheat oven to 325 degrees.
2. Mix ingredients for pastry.
3. Place dough evenly in 4 small pie dishes* and and press down. (Divide dough in 4 parts for accuracy)
4. Place in oven and bake for about 5-10 minutes.
5. Prepare vegetable ingredients for filling/topping.
6. Mix 4 eggs in a mixing bowl and then add the all the vegetable ingredients. Mix well.
7. Remove quiche pastry from oven when ready and then pour egg mixture over top.
8. Sprinkle some salt and pepper on top for flavor.
9. Place quiches in oven and bake for another 15minutes.
10. Remove from oven, serve and enjoy! 

*We use the removable bottom mini pie dishes.

  1. could you use one 9-inch tart pan for this recipe instead of making individual ones?

    1. Not sure. You may want to consider doubling the recipe. I found an image online that shows 4 of our mini pans within a 9 inch tart pan - take a look:
