On Sunday we began fermenting red cabbage after our success with our green cabbage. We now have a new addition to the fermenting family - celery! Celery is a very good source of vitamin C, a vitamin that helps to support the immune system. It contains compounds that help prevent free radicals from damaging cells. We heard it was one of the tastiest of fermented foods and can't wait to try it in a couple weeks! Fermenting vegetables creates healthy bacteria that helps fight off disease and toxins in our body.
