Poached Eggs In Avocado Bowls

The Food Chemistry journal publicized that one raw egg, its yolk in particular, contains at least twice as many antioxidant properties as an apple! Previous research has been conducted to reveal that stomach enzymes actually break down egg proteins and produce peptides - which lower high blood pressure. However, eating too many egg whites can cause a biotin deficiency. Eating the yolks only, or the biotin rich yolks with the whites will prevent this problem.
Avocados are good for your heart and blood vessels. The vitamin B6 and folic acid in avocados provide healthy regulation of homocysteine levels. The higher the homocysteine levels, the greater the risk of a fatal heart attack. We came across a couple of posts for 'Egg and Avocados' and were inspired to do a raw version. We want to incorporate more raw foods in our diet and we'll be writing about this in an upcoming post.

Poached Eggs in Avocado Bowls Recipe
Serves 1
Ingredients: 
∙ 2 happy free range egg yolks
∙ 1 organic avocado
∙ 3 tbsp organic celery (chopped)
∙ 3 tbsp organic leeks (chopped)
∙ organic cilantro
∙ organic cayenne pepper
∙ organic black pepper
∙ sea salt
∙ organic crushed red pepper spice

Directions: 
1. Boil water and then bring it down to about 108° (we use a frothing thermometer).
2. Separate egg yolks from whites and add to (108°) water. Let sit for 3-5 minutes.
3. Wash avocado (peel) and cut in half. Then remove the seed. (Make sure both halves have a bowl deep enough to hold the yolk. You may need to scoop out a little avocado).
4. Place avocado halves on a plate and distribute the celery and leeks around the plate.
5. Using a spoon, remove egg yolk from water (one at a time) and place inside avocado bowl.
6. Add some leeks, celery and cilantro on top and sprinkle (your choice) of salt, pepper, cayenne pepper and crushed red pepper spices!
7. Serve and enjoy!
