We were curious to find out why some people still considered brown rice to be toxic to their health. We ate gluten free brown rice because it was healthier to eat, but with more research we have discovered that rice/grains must also go through a pre-soaking period in order for it to release it's enzymes and make it more digestible (regardless of it being gluten free)! The recommended time is about 8 hours. From now on, when we know we are making rice for dinner, we'll be pre-soaking the rice first thing in the morning or overnight so it's ready for use by dinner time. For those interested in a healthier diet, you may want to do the same.
