Simple Red Cabbage Casserole - Vegetarian

Red cabbage is an excellent source of antioxidants and has more nutritional benefits than green cabbage. Tomatoes are also an excellent source of antioxidants and provide a good amount of vitamin C and beta carotene. Asparagus provides a wide variety of antioxidant nutrients, including vitamin C, beta-carotene, vitamin E, and the minerals zinc, manganese, and selenium.

Red Cabbage Casserole Recipe
Serves 2-4
Ingredients: 
∙ 1/2 organic red cabbage (shredded and steamed)
∙ 1 organic leek
∙ 1/2 organic red onion
∙ 3-4 organic garlic cloves 
∙ 8 organic asparagus shoots
∙ 1 organic celery stalk 
∙ 1 organic carrot
∙ organic coconut oil
∙ 3 free range happy chicken eggs

Tomato Sauce Ingredients:
∙ 1/2 organic red onion 
∙ 3 organic garlic cloves 
∙ 1 organic carrot 
∙ 3 large organic tomatoes 
∙ organic coconut oil 
∙ sea salt 
∙ organic cayenne pepper
∙ organic black pepper 
∙ organic spicy red pepper flakes

Directions: (Start with tomato sauce ingredients)
1. Chop red onion and garlic and set aside. 
2. Peel carrot and chop into pieces. Set aside.
3. Dice tomatoes and set aside.
4. In a small sauce pan, add some oil and add onion and garlic. Mix for about 1-2 minutes.
5. Add diced tomatoes and carrots to the pan and continue mixing for 1 minute.
6. Add some salt, cayenne pepper, spicy red pepper and black pepper to the sauce and simmer for about 15-20 minutes.
7. In the mean time, preheat oven to 325 degrees. 
8. In a round 9" glass oven pan, place 3/4 amount of shredded cabbage, spreading evenly across surface.
9. Chop leeks, red onion and garlic and let sit for 5 minutes.
10. Chop asparagus, celery and carrots and set aside.
11. In a small frying pan, add some oil and lightly fry leeks, onions and garlic for 2-3 minutes.
12. Add onion mix to the cabbage (8.) and then add the chopped celery, carrots and asparagus, spreading evenly throughout.
13. Once sauce is ready, add the tomato sauce on top of the cabbage and vegetables.
14. Next add a layer of the remaining shredded cabbage. Set aside.
15. Beat 3 eggs in a small bowl. 
16. Pour eggs over top of tomato sauce, covering surface evenly. 
17. Place in oven rack and bake for 15-20 minutes. 
18. Once complete, remove from oven and serve and enjoy!
