Over the summer, we bought some organic corn and made dehydrated corn chips with homemade 'sour cream'. We don't have dairy in our diet so we love to discover alternatives to our favorite dairy foods, such as sour cream. The recipe uses sunflower seeds as the key ingredient for the cream. We only eat certified organic food - both our sunflower seeds and corn were organic. We also made sure to pre-soak the seeds! Buying organic corn is a healthier option because Certified Organic farmers are not allowed to plant GMO seed. You can find out more information at the Non GMO Project website. Faux Sour Cream Recipe
∙ organic garlic (cooked, let sit for 5 minutes before lightly frying with coconut oil)
∙ Himalayan sea salt

Faux Sour Cream Recipe
Serves 2
Ingredients:
∙ 1/2 cup of pre-soaked organic sunflower seeds (min. 6 hours soaked)
∙ organic red onions (diced, let sit for at least 5 minutes before blending)
∙ 4-6 tbsp of filtered water
∙ 1 organic lemon (medium sized)∙ organic garlic (cooked, let sit for 5 minutes before lightly frying with coconut oil)
∙ Himalayan sea salt
Directions:
1. Squeeze lemon into a container.
2. Add seeds, onions, water and seasoning.
3. Blend all ingredients using a hand blender. The more time you blend, the smoother.
4. Add more seasoning if necessary.
5. Place in fridge for at least an hour to chill.
6. Add to guacamole, gnocchi, yams or use as a dip for chips. Eat and enjoy!
Note: You can manipulate this recipe to adjust the texture.
