Mushroom, Cabbage and Red Lentils - Meal of the day

Our bodies have a 'clock' in which each organ is most active, having high and low energy levels. From 7-9 am, our body focuses on the stomach. It is important to have our biggest meal of the day by this time. I would recommend fruits (such as freshly squeezed orange juice) when you first wake up and then make sure that by 9am (no later than 11am if necessary), you've had your big meal of the day. It's not very often that I have cooked meals, especially with legumes, but I decided to give it a try after some time. The main ingredient for this meal is raw green cabbage (effective for cleaning the kidneys - purple is best). I prepared this delicious and simple meal using only 1/4 cup or so of red lentils (per person). Lentils are good for your heart due to the amount of fiber, folate and magnesium it supplies. Mushroom, Cabbage and Red Lentils Recipe 
Serves 2
∙ 1/2 organic red or green cabbage
∙ organic green onions or red (diced, let sit for at least 5 minutes)
∙ organic garlic (finely chopped, let sit for at least 5 minutes)
∙ 1/2 cup of red lentils (cooked)
∙ bunch organic parsley
∙ organic mushrooms of choice (portabello or shiitake are healthiest)
∙ Himalayan sea salt
∙ organic coconut oil (cold pressed, virgin)
∙ 2 tbsp of organic olive oil (cold pressed, virgin)
∙ 1/2 organic lemon

1. Lightly fry onions, garlic and mushrooms in coconut oil and set aside.
2. In a large mixing bowl, add lentils (once cooled).
3. Chop cabbage in strips until you reach a desired amount (about 2 cups per person) and then add to mixing bowl.
4. Chop parsley and add to mixing bowl.
5. Add mushrooms, garlic and onions to mixing bowl.
6. Add salt, olive oil and mix all ingredients. 
7. Squeeze lemon and mix again. Serve, eat and enjoy!
