Green Tea Latté With Sprouted Almond Milk

I love lattés! Once I found out about the dangers of cow's milk, I switched to homemade almond milk or coconut milk for my drinks. Processed almond milk that is sold in stores is not healthy due to the fact that they do not sprout their almonds before processing. All nuts must be pre-soaked in order to activate the nutrients and release the enzymes. Nuts that have not been pre-soaked contain enzyme inhibitors that are toxic to our bodies! Creamy Pumpkin Pie (50% raw and dairy-free)

Winter squashes are vegetables proven to have antioxidant, anti-inflammatory, as well as anti-diabetic and insulin-regulating properties. They can be prepared cooked, raw, sweet or savory. There are a variety of winter squashes to choose from, such as sweet dumplings and pumpkins. In celebration of Autumn, we decided to make a homemade organic pumpkin pie! Although we like to eat raw, we decided to bake our pumpkin in order to get a smoother texture, but our crust and some of our pie filling is raw! Living Foods - Banana Nut Muffins (dehydrated and live with enzymes)

Living foods are raw foods (vegan) that contains enzymes, vitamins, and minerals that the body needs to heal and maintain optimal health. The 2 types of enzymes in our bodies are digestive and metabolic enzymes. Digestive enzymes digest food and metabolic enzymes carry out our body's functions. The digestive and metabolic enzymes in our bodies are in competition with each other. When we eat more raw food (live with enzymes), the digestive enzyme potential in our bodies does not have to be used for digesting, and so allows the metabolic enzymes, that run our body and keeps all organs and tissues working properly, to rebuild new and healthy cells. On the other hand, when we eat cooked foods, digestive enzymes are needed to digest these dead foods, which also accumulate in the body for years and become acidic causing disease. The constant use of digestive enzymes slows down the use of metabolic enzymes which in turn, slow down our healing/regenerating process that prevents us from maintaining optimal health.
We love our dehydrator and have recently come up with a recipe for 'Living Banana Nut Muffins'. All the ingredients used contain enzymes and have not been cooked. Our nuts were sprouted and we used fresh shredded coconut along with dried dates for added sweetness. We also topped them off with some raw cacao nibs. We absolutely loved the results and felt they tasted just like baked banana nut muffins! See recipe below.

Zucchini 'Pasta' With Pesto Sauce - Raw

Zucchini 'pasta' provides an excellent source of antioxidants that protect our cells from damage, caused by free radicals. It is a healthier alternative to grain pasta, since it is not cooked. It will provide you with live enzymes, that predigest food, so you don't waste metabolic enzymes that are needed for rebuilding healthy cells. We learned about 'Zucchini Pasta With Basil Pesto Sauce' from Dr. Bergman's video on 'enzymes'. We added nuts to our recipe, but it is optional to use if you decide to try it out. This was our first time trying homemade basil pesto sauce. It tasted amazing and is also very nutritional and live with enzymes. Ice Cream 'Cannoli' - Raw

For our latest raw dessert, we made Ice Cream 'Cannoli' topped with a 'caramel' sauce made of raw organic honey. Raw honey predigests food! It has a significant amount of plant amyalse which does not come from the bee, but from the pollen of the flowers. You can predigest food when you eat raw honey, and the more you chew, the more digestion takes place. Check out our recipe below for the 'cannoli' shell and assembly process. Enjoy!

Double Cacao Dipped Mini 'Donuts' - Raw

Some common ingredients in raw desserts are nuts, pitted dates, seeds, coconut and raw cacao. Raw cacao is very nutritious and considered a 'superfood'. It contains unique properties and minerals that include high levels of magnesium.
For our new raw dessert recipe, we created Double Cacao Dipped Mini Donuts! We were limited by the ingredients we had available, so feel free to use other ingredients you may have such as shredded coconut. The ingredients in this recipe can also be used to prepare raw brownies or truffles as well. The process is easy and effective for creating mini donuts that look like the real thing! Give it a try. Homemade Honey Nut Muesli

We are incorporating raw foods daily, to take in digestive food enzymes that aid in digestion and overall health. Enzymes are necessary in our diet! Homemade Muesli is an excellent raw food breakfast idea, as long as you are not on a grain free diet. A couple days ago, we prepared Apple Cinnamon Muesli by oven dehydrating our ingredients for 2-3 hours (you can use a regular dehydrator). Our oats and nuts were pre-soaked for 24 hours prior to dehydrating. Today, we had some homemade Honey Nut Muesli- very tasty and healthy! Check out our simple recipe below.
Honey contains a variety of vitamins and minerals including Vitamin C, calcium and iron. Enjoy!

Homemade Apple Cinnamon Muesli

Cinnamon has anti-fungal, antibacterial and anti-parasitic properties! For breakfast, we decided to make homemade Apple Cinnamon Muesli with hemp seeds. There is something pleasant about the smell of warm cinnamon and apple. We dehydrated all our ingredients in our conventional oven, after 24 hours of pre-soaking them in water. Try our recipe below over the weekend (or prepare muesli the evening before) and enjoy the aroma of apple and cinnamon while they dehydrate. All enzymes remain active once ready, so it is a healthy treat!

Homemade Fudgesicles With Pumpkin Seeds

The best raw dessert we have tried so far is homemade ice cream. It's organic, dairy-free and sugar free! It contains enzymes, nutrients and antioxidants! There is a variety of flavors that we choose from including strawberry, vanilla, cacao, and green tea. Over the weekend, we purchased some IKEA Popsicle Makers for only $1.99! We used our ice cream recipe and tried it out on the popsicle makers. The result was tasty fudgesicles! See recipe below. We also made some fresh cacao syrup that we dipped our fudgesicles in, once they were frozen. And then we topped it all of with chopped organic pumpkin seeds... yummy!

Mini Cacao Zucchini 'Flat' Cakes

We love cacao because it tastes just like chocolate, but is a healthier alternative because it contains antioxidants. We're still baking with pre-soaked gluten free flours until we decide to go 100% raw. We are still experimenting with raw foods and are at least incorporating it in our diet 80% of the time.

Double Dose Of Oats

In earlier posts we mentioned the importance of pre-soaking grains, seeds, nuts and even flour! When you pre-soak grains, nuts and seeds, you are releasing nutrients and enzymes that allow you to digest food more easily. We pre-soaked some oats for 24 hours and created a new recipe for muffins, using coconut flour. Unlike other flours, coconut flour does not need to be soaked because it is neither a grain or nut. We were inspired by BakerStreet to create 'Apple Cinnamon Crumb Muffins'. We don't use most of the ingredients the recipe called for so we had to do our own rendition with coconut flour (see recipe below). We also baked a new version of our Oats and Shredded Coconut Cookies made with pre-soaked brown rice flour (recipe coming soon). Enjoy!

A Raw Menu

Over the weekend, we decided to eat strictly raw meals! So far, the only issue we seem to have with raw foods is tolerating the strength of raw onions, raw garlic and raw ginger. We created recipes that would create a milder taste (from the power of raw onions) by incorporating plenty of vegetables and coconut cream. The food tasted amazing! It consisted of appetizers, a main course and double desserts (recipe for ice-cream is available at the bottom of the post, Gazpacho recipe coming soon...). Enjoy!

Fresh, raw foods and cultured/fermented foods have energy in them! According to Lou Corona, when food is cooked at 105 degrees, the enzymes (energy) begin to die. Once food is cooked past 118°, the life energy is gone! Once the life energy of food is gone, we can still gain some nutrition but we have to use more of our own energy to digest the food, which in turn drains our life source - the enzymes in our body! So basically, we can gain energy from raw foods instead of wasting energy trying to digest stubborn foods! We've decided to eat more raw foods to experiment and find out if we need to go completely raw.
Other than our ice-cream recipes (coming soon), we haven't prepared much raw desserts so we got inspired by this Cherry Tart recipe. There is also a similar recipe here. Both look amazing! We slightly modified the original recipe and created our own 'Nut- free Cherry Tart' recipe! You definitely feel energized after eating raw foods, which includes smoothies and vegetable juices. Our recipe is a good choice for people who presently have nut allergies. Enjoy!

Homemade Ice Cream

The weather has finally called for ice cream! We've been making it almost every day now, in three different flavors (peanut butter, strawberry and chocolate). Our homemade ice-cream is dairy free and easy to make - without the use of an ice cream machine! Recipe is coming soon...

Crêpes Two Ways

Pre-soaking flour overnight is important in order to break down enzyme inhibitors so nutrients can become available for us to have, making it easier to digest. This applies to gluten free flour as well. We decided to put this into practice and pre-soaked some flour for 24 hours. We chose to make two types of crêpes - fruit and vegetable. For the fruit crêpes, we added strawberries, honey and pre-soaked nuts after baking the crêpes. For the vegetable recipe, we decided to make red onion, garlic and zucchini crêpes that we baked in the oven with the ingredients. Two different flavors and both very tasty! Butternut Squash Cookies

Butternut squash provides about one-third of the Daily Value of vitamin C in every cup and contains vitamins are B1, B3, B6, pantothenic acid, and folate. The sweetness of butternut squash makes it an excellent ingredient for cookies! Cacao Fudge Zucchini Cookies

Over the weekend we purchased flax meal and wanted to try it out for our new cacao cookie recipe. We usually use chia seed powder because it has more health benefits than ground flax, but were curious to try something new. Last week we made our own sweetened cacao chunks for our double cacao and oatmeal cacao chunk cookies. We wanted to make more cacao chunks but decided to add more coconut cream to the recipe. It turned out more like fudge than chunks so we decided to go with it and make cacao fudge cookies instead of chunks. We also wanted to add zucchini to the recipe so they would be more chewy than our last batch of cookies. Very yummy! (see recipe below)

Green Delicious

Apple crisp made with natural shredded coconut, organic oats, organic coconut nectar and organic (pre-soaked) nuts is a quick and easy dessert idea! We made 2 small servings in under 15 minutes. The ingredients in this recipe do not require a lot of cooking time except to soften the apples. We used organic granny smith apples for this recipe and the results were yummy!(see recipe below)

'Anyone who says sunshine brings happiness has never danced in the rain'

Today was a chilly day lashed by rain and strong winds, here in Toronto. We started our night off with a warm cup of 'cliff hanger' americano. Once we got the cappuccino machine fired up, we decided to incorporate the green pea flour and bake Mocha and Peanut Butter Zucchini Brownies. This is our latest gluten free dessert recipe with a rich texture and an abundance of flavor! (see recipe below) Enjoy!


Mocha and Peanut Butter Zucchini Brownies Recipe
Makes 8 pieces
Ingredients:
∙ 1/2 cup of organic rice flour
∙ 3 tbsp of organic almond flour
∙ 3 tbsp of organic green pea flour
∙ 1 1/2 tbsp organic black chia seed powder 
∙ 1/4 cup of organic raw cacao powder
∙ 1/4 cup of organic shredded coconut
∙ 1/2 tbsp of organic vanilla bean powder (fresh vanilla beans are best)
∙ 1/2 tsp of baking soda (non GMO)
∙ 3 tbsp of organic coconut palm powder/sugar
∙ pinch of Himalayan salt
∙ 1/4 cup of organic shredded zucchini
∙ 2 tbsp of organic peanut butter
∙ 1 happy chicken egg (free run)
∙ 2 tbsp of organic coconut oil (melted)
∙ 1/4 cup of organic fair trade espresso

Directions:
1. Preheat oven to 325 degrees F. 
2. In a large mixing bowl, mix rice flour, almond flour, green pea flour, baking powder, black chia seed powder, pinch of sea salt, raw cacao powder, shredded coconut, vanilla powder, baking soda, coconut palm powder and salt. Mix ingredients well.
3. Add zucchini to dry ingredients and mix well.
4. Add peanut butter to ingredients and mix well. Set aside.
5. In a separate bowl, mix egg, melted coconut oil and espresso. 
6. Add to dry mix. Mix well, will be slightly sticky.
7. Scoop out and place in a round flat 9" glass oven dish. 
8. Place in oven rack for 15-20 minutes or until edges are browned.
9. Remove from oven and let cool.
10. Once cooled, drizzle fresh honey for added sweetness (otherwise you may find the cocoa powder too strong in flavor).
11. Serve and enjoy!
