Bean Soup (Sopa De Frijoles) with Faux Sour Cream

Sunflower seeds are high in Vitamin E - a potent antioxidant. It offers protection against damage to the fats that line the outside of every cell by traveling throughout the body neutralizing free radicals. Why bother with dairy when there are plenty of healthy alternatives, such as faux sour cream made with organic pre-soaked sunflower seeds! It's a simple recipe that goes great with Bean Soup and Avocados, Bean Salads, Yam Gnocchi and more! Nuts, seeds and coconuts are amazing alternatives for those of us who grew up on dairy not knowing about the harmful effects. Some of our favorite foods are hard to give up and now we don't have to. I'll be posting more recipes with faux dairy ingredients so stay tuned.

Green Beans Please

Green beans contain minerals like iron, calcium, magnesium, manganese, potassium and also have anti-inflammatory benefits (carotenoid and flavonoid). They provide nutrients such as vitamin C and beta-carotene as well as the mineral manganese - all of which are antioxidant nutrients! Green beans are also an excellent source of vitamin K and are great for cardiovascular health. You can eat them raw or slightly cooked. Boil them in a small amount of water, drain and then chop into pieces (make sure to cut off the ends). Then add them to some of your favorite meals with some lemon and salt for extra flavor!

Orange And Mango Spring Salad

Today marks the first day of Spring! In celebration of this new season we created a recipe for Orange And Mango Salad with Hemp seeds. Organic oranges contain over 170 different phytonutrients. The nutrients and high amount of anti-oxidants found in oranges help protect from damages by free radicals and stimulates white blood cells (to fight infection) and digestive juices (to relieve constipation). Hemp seeds contain protein that is easily digestible and contain Omega-3 fatty acids which are considered essential for human health. Enjoy the recipe below!

Spicy Mango Salad

Other than cold soups, salads are another great option for raw food ideas. One of our favorite salads is the Spicy Thai Mango Salad. The mix of spicy, sweet and sour makes it a flavorful meal! Our salad was made with all raw ingredients including red onion, cilantro, garlic, ginger and lettuce with a mix of spice! Very tasty and energetic!

Live Curtido Salad

We've been fermenting lots of red cabbage to create healthy bacteria for a strong immune system! It is important to have pro-biotics after the use of anti-biotics in order to have a strong immune system! Our latest live salad recipe was created with fermented 'curtido' along with some fresh parsley and summer squash. Summer squash (yellow zucchini) is an excellent source of manganese and vitamin C. It is also a good source of vitamin A which supports the immune system. Give it a try! (see recipe below)

Spicy Live Cauliflower Salad

A little over a week ago, we prepared more vegetables to ferment. Fermenting vegetables creates pro-biotics for our gut flora! Today we cracked open our cauliflower and leek mix to make another spicy live salad. We added fresh organic tomatoes, cilantro, red cabbage, (pre-soaked) seeds and spices - very tasty! Cauliflower is an excellent source of vitamin C and has anti inflammatory nutrients. (see recipe below)


Spicy Live Cauliflower Salad Recipe
Serves 1-2 
Prep Time 5 minutes! 
Ingredients: 
∙ 1 large organic tomato 
∙ a handful of organic cilantro
∙ 1/2 cup of organic red cabbage (shredded)
∙ 2 tbsp of organic sunflower seeds (pre-soaked over night)
∙ 2 tbsp of organic pumpkin seeds (pre-soaked over night)
∙ 1 cup of fermented organic cauliflower and leek mix
∙ organic cayenne pepper 
∙ dry kale spice (optional - see recipe here) or dry kale
∙ non-treated pink sea salt 
∙ organic black pepper 
∙ organic crushed red pepper

Directions:
1. On a chopping board, dice tomatoes into small chunks and place in a large mixing bowl.
2. Chop cilantro into small pieces and add to large mixing bowl.
3. Add shredded cabbage, seeds and fermented vegetables to mixing bowl.
4. Sprinkle cayenne pepper, dry kale, salt and black pepper onto vegetables and mix ingredients.
5. Add crushed red peppers and continue mixing until all ingredients are mixed well with spices.
6. Serve in two bowls and enjoy!

IMPORTANT: Make sure you tightly seal the lid, on the fermented veggies that are left behind in the jars, after you've measured out how much you will use. This will prevent mold. Also DO NOT put the jars in the refrigerator because you will kill the bacteria and you will have defeated the purpose of fermenting in the first place.

Spicy Live Salad With Lentil

I recently created an article that contains my latest fermenting recipe that I felt was worth sharing. Raw Lettuce Wraps

Lettuce is a good source of chlorophyll and vitamin K. Chlorophyll helps to rebuild and replenish our red blood cells which boosts our energy and increases our health. Kale contains an excellent source of antioxidant and anti-inflammatory benefits. It is high in vitamin K, vitamin A, vitamin C and manganese. It contains many vitamins and nutrients such as fiber, copper, calcium, potassium, iron, magnesium, protein, omega-3 fats and more! Below is a lettuce wrap previously inspired by this recipe. It's a simple raw food lunch that is very tasty and nutritious. (simple to make - see below)


Recipe
Serves 1-2 
Ingredients: (your choice of vegetable portion)
∙ 4 organic Boston lettuce leaves
∙ organic tomato slices
∙ organic dried kale chips with lemon and pumpkin seeds
∙ organic zucchini strips (cut lengthwise)
∙ celery strips (cut lengthwise)
∙ organic carrot strips (cut lengthwise)
∙ organic hemp seeds
∙ sea salt
∙ organic pepper

Directions:
1. Lay out 2 lettuce leaves on a plate and place a 2nd layer on top of the 1st layer.
2. Place tomatoes on top of the leaves.
3. Continue placing vegetable strips on top (carrots, celery, zucchini).
4. Add some dried kale chips.
5. Sprinkle some hemp seeds over top.
6. Add salt and pepper for added flavor.
7. Use a string to tie if you are going to serve them to others. Otherwise just roll the lettuce up, keeping the ingredients inside, and eat and enjoy!

Wrapping It Up

We wanted the benefits of chlorophyll so we decided to try a raw lunch alternative. Lettuce is a good source of chlorophyll and vitamin K. Chlorophyll helps to rebuild and replenish our red blood cells which boosts our energy and increases our health. Read our previous post about the health benefits of 'greens' here.
Below is an organic hydro grown lettuce wrap with organic carrots, organic tomatoes, organic zucchini, organic enzyme activated (pre-soaked) pumpkin seeds, sea salt and organic pepper with organic mustard for extra flavor! We wrapped up the ingredients with a double layer of lettuce so it would hold well. Very tasty and energizing! This wrap was inspired by this recipe.
