Zucchini Spaghetti With Veggie "Meatballs" (rice)

I've been slowly implementing more cooked foods into my diet to test things out. I definitely feel the difference in digestion time. Raw is best! But if you want to keep cooked foods in your diet, there are still healthy ways to do it. When cooking rice, use organic brown rice that has been pre-soaked for at least 8 hours (overnight). When frying foods, always use coconut oil and cook at lower heat temperature. Although coconut oil can stand high temperatures, it's a matter of not cooking every bit of nutrition out of the food. Also, when making tomato sauces, keep it raw because tomatoes become acidic when cooked and will have no nutritional value for you. I came up with another simple recipe for veggie 'meatballs' using rice as the main component. I topped it off with Homemade tomato sauce. I'll be posting the recipe soon... Green Curry Eggplant and Mushroom Sauce

The main ingredients in Green Curry Sauce are coconut milk and green curry paste which is usually made up of lemongrass, jalapeno, shallots, garlic, ginger, coriander, basil, cumin, pepper, peanut oil and fish sauce. We like to experiment with homemade green curry sauces, since we don't always have the ingredients needed. Green curry is full of flavor and is very healthy. There are a variety of spices and herbs in curry that are beneficial to your health, including reducing inflammation of the joints. We like to prepare our green curry sauce raw- in order to have the enzymes it provides with coconut milk. Check out our latest green curry sauce recipe with eggplant and homemade coconut milk! We poured our sauce over a bed of cauliflower 'rice' -Very yummy.

Vegetable Cauliflower 'Rice'

Most of our daily meals (while cleansing) consist of cauliflower or turnip 'rice' with raw vegetables and (at times) one or so element of steamed vegetables, yams, soups or cooked lentils (pre-soaked for 24-48 hours to release enzyme inhibitors). For snacks we have sprouts or fruits, including dried fruits such as dates and banana chips. For dessert, we usually have homemade ice cream or raw cacao pudding! Here is our latest recipe for our cauliflower 'rice' with vegetables and steamed asparagus. We had this meal with a side of avocado soup. Check out our simple recipe below. Enjoy!

Green Curry With Turnip 'Rice' And Lentils

Some of our raw dinners contain one or two cooked elements/ingredients that gets predigested with the enzymes raw foods provides. We do not eat anything cooked without adding a sufficient amount of enzymes to predigest the food. Last week we didn't have cauliflower for cauliflower 'rice', so we decided to try out 'turnip' rice, with some green curry sauce made with raw coconut milk.
Turnips enhance blood purification. They are high in vitamin K and have antioxidant and anti-inflammatory benefits. Lentils are high in folic acid which allows for cellular growth and DNA repair. Coconut meat has enzymes, so we didn't heat it after we prepared our home made coconut milk. This recipe is served at room temperature but is very tasty! Give it a try. Enjoy!

Green Peas and Corn With Cauliflower 'Rice'

Cauliflower is an excellent alternative to rice (grain) and can be served raw. Cauliflower has antioxidants, anti-inflammatory benefits and improves digestion. For our 'raw' dinner last night, we steamed some healthy organic green peas and spinach that we added to a raw cauliflower 'rice' mix that included raw corn, raw (pre-soaked) pumpkin seeds and fresh basil from our indoor basil plant. Simple Vegetarian 'Meatloaf'

Until we decide to go on a grain free diet, we are pre-soaking our rice and lentils for 24 hours prior to cooking. Pre-soaking grains, seeds and nuts releases enzymes that are needed for digesting. Even though we still have grains in our diet we make sure to have a good portion of raw foods daily. Our recipes always consist of raw and cooked foods or simply raw! Our latest recipe is Vegetarian 'Meatloaf'. We cooked our gluten free brown rice and lentils with some vegetables and topped it off with a new tasty raw tomato sauce! Cauliflower 'Rice' With Fish

Cauliflower has antioxidants and anti-inflammatory nutrients. It is an excellent alternative to rice and a great choice if you are on a grain free diet! We created a 15-20 minute recipe for fish and cauliflower 'rice' that incorporates raw foods. The fish and onion mix are the only food that has been cooked. The rice and corn are raw and energizing! Raw Kitchari - With Cauliflower 'Rice'

In India, the mix of rice and mung beans is considered easy to digest and is said to purify the digestion and cleanse the body of toxins. We came across the recipe for 'kitchari' when we were learning about digestive cleansing. Last week we recreated the recipe we found but didn't use white basmati rice and instead used pre-soaked brown rice. We also didn't have any mustard seeds or guee so we used coconut oil. It was very tasty! This week, we thought we would try a raw version by using the recipe for 'kitchari' with cauliflower 'rice' and lightly sprouted mung beans. The results were amazing! Every time we eat raw, we feel instant energy. Since there are recipes such as 'kitchari' that use rice in cleansing, we have not decided to cut rice of our diet for now, but will also continue to eat as much raw foods as possible! Our onions and garlic were lightly fried with coconut oil so it's a 90% raw dish. We are still getting used to the raw onions and garlic, even after soaking them in water.

Cauliflower Rice With Lentils and Shiitake Mushrooms

Cauliflower has excellent health benefits and is often used for detoxification because of the antioxidants and anti-inflammatory nutrients it provides! Since we're adding more raw foods to our diet, but enjoy eating rice, we created a cauliflower rice dish to test out as an alternative to rice. We want a wide range of options if we go 100% raw so we are going to be putting everything to the test. We added a small amount of cooked French green lentils and lightly fried our shiitake mushrooms, onions and garlic with some coconut oil. We waited for the lentils and mushrooms to cool down before adding them to our raw dish. We also had a side of our delicious Avocado Soup so we could incorporate more raw food to our dinner. And for dessert, a yummy homemade ice cream sundae topped with pumpkin seeds. It was a tasty and energizing meal! We are definitely going to be making cauliflower rice again and possibly replacing our brown rice with it. See 'rice' recipe below. Enjoy!

Avocado Soup and Shiitake Mushrooms With Brown Rice

Avocados are an excellent source of protein. They provide all 18 essential amino acids that the body requires to form protein. It contains antioxidants, anti-inflammatory nutrients and beneficial fats that protect the body against damage caused by free radicals. 
Celery is rich in vitamin A, vitamin C, vitamins B1, B2, B6, calcium, magnesium, iron and essential amino acids. When you juice celery, nutrients are released in the fiber that aids in digestion. An excellent choice for raw foods are soups. You can simply blend organic vegetables of your choice and serve them up in under 15 minutes. (see recipe below)

Dinner And Dessert

For a week now, we have been incorporating raw foods in our diet! Whether we eat 100 % raw all day or 70% raw, we are finding it to be beneficial. There is energy in raw foods that energize you after a meal instead of making you feel tired. We love green curry rice and decided to experiment with a raw version of green curry milk over a bed of pre-soaked (cooked) gluten free brown rice. The results were amazing! The rice was pre-soaked for 24 hours and then cooked. We did the green curry paste separate and added homemade coconut milk* to it. The garlic and onions were soaking in water for 15 minutes and then added to create the curry paste. Once the rice was cooked, we let it sit until it got to about 100°. We then poured the green curry with coconut milk in the rice and stirred for 2-3  minutes. The subtle warmness helped the green curry milk mix well with the rice and it tasted really good! We topped it off with some fresh guacamole and cilantro. We also made some Green Tea Ice Cream (see recipe below). Give it a try!

Live Vegetables With Rice

Raw yolks help eliminate toxins from your body! Since we are trying to incorporate more raw foods in our diet, we created a meal of raw veggies and egg yolk on a bed of pre-soaked cooked brown rice. The eggs we purchase are organic free range chicken eggs, so they come from happy healthy chickens. This meal is easy to do and will benefit your body (see recipe for details). Cauliflower provides us with antioxidants and is an excellent source of vitamin C, and a very good source of manganese. Enjoy!

Yummy Yams and Shiitake Mushrooms with Brown Rice

Yams are a good source of vitamin B6, potassium and fiber! We love to add them to our rice dishes for it's sweet flavor. Ever since we began pre-soaking our gluten free brown rice, we have enjoyed our dishes even more than before, without feeling bloated. We recommend pre-soaking your brown rice for 24-48 hours in the fridge. We made Yummy Yams and Shiitake Mushrooms with Brown Rice and the results are amazing! (see recipe below)

Releasing The Nutrients In Brown Rice

We were curious to find out why some people still considered brown rice to be toxic to their health. We ate gluten free brown rice because it was healthier to eat, but with more research we have discovered that rice/grains must also go through a pre-soaking period in order for it to release it's enzymes and make it more digestible (regardless of it being gluten free)! The recommended time is about 8 hours. From now on, when we know we are making rice for dinner, we'll be pre-soaking the rice first thing in the morning or overnight so it's ready for use by dinner time. For those interested in a healthier diet, you may want to do the same.

Zucchini and Shredded Coconut Flatbread

We haven't baked any gluten free bread loaves (except for flat bread and buns) because we don't have organic yeast. Since we love fermenting food now, we'll be making our own yeast tomorrow to finally bake some loaves. For now, enjoy our recipe (below) for gluten free zucchini and shredded coconut flat bread. For dinner, we toasted some of the bread and then blended it to use as bread crumbs for our Fish and Chips! (see image below). We also added some more fermented veggies on the side. Yummy and healthy!

Spicy Benefits

Curry spices are healthy! They each have their own health benefits and combining them means adding more health to your meals! We wanted to make another curry chicken dish and decided on chicken roti. Free-run vegetable grain-fed chickens, that are free of antibiotics, are a good source of protein, Vitamin B and selenium. Selenium is an essential component of thyroid hormone metabolism and immune function. We were unable to wrap our roti because of the gluten free flour we used, so we had an open roti meal. It was very tasty and healthy!

Curry Rice With Green Peas

We love curry spices and have been incorporating them more frequently in our dinners ever since we made our first green curry chicken dish. We try to mix up the spices in different ways to get a similar flavor.
Below: Organic short grain brown rice (gluten free) with turmeric powder, cumin powder, cayenne pepper, curry leaves, shiitake mushrooms, oyster mushrooms, green peas, carrots, garlic, leeks and topped with steamed asparagus. It was full of flavor!

Homemade Cacao Chunks

When we stopped eating chocolate, but wanted to have some chocolate chips, we discovered the closest thing to it was carob chips. Carob chips taste just like chocolate but are highly nutritious. Unfortunately we have not been able to find any organic carob chips so we haven't had any for quite some time. We were inspired to make double chocolate chunk cookies but were trying to figure out how we could make cacao chunks from cacao powder. With some imagination, we created our own homemade raw cacao chips. (see recipe below)

Brown Rice and Scallops On a Bed of Cabbage

Fermenting vegetables creates healthy bacteria that repairs the gut. 80% of our immune system is in our gut flora! About two weeks ago we began fermenting cabbage to create our own pro-biotics. Yesterday, we decided to crack open one of our jars and give it a taste test. It was amazing! We wanted to make kimchi with our scallops and rice dinner but didn't have all the ingredients required, so we just added some chilli pepper, garlic, onions and ginger to our cabbage. Very tasty! This had also been the first time we made scallops and they were a success! This one one of the healthiest dinners we've had and we felt very energized afterwards. Today we'll be fermenting more vegetables and will keep you posted on the results.

Grilled Green Pea Egg Sandwich

Green pea flour is a high protein flour that is gluten free. We recently purchased this flour and tried it out for the first time to make bread. There were many ingredients added to our recipe because we were unsure of how it would taste. Our organic green pea bread recipe included organic rice flour, organic walnuts (pre-soaked), organic shredded coconut, organic coconut flour, organic black chia seed powder, organic hemp seeds, organic quick oats, water and happy chicken eggs. The results were tasty! Next time we will try a dessert recipe with the flour. (see bread recipe below)
