A Citrus Passion

Citrus fruits contain citric acid which has an alkalizing effect when consumed and aids in both the production of digestive juices and the process of digestion. They have additional antioxidant constituents - including Vitamin C. For the past couple of weeks, we've prepared a citrus fruit juice made with freshly squeezed grapefruit, oranges, lemon and lime. It's a healthy and energetic way to start the day!  Chemistry has two sides - acidic/corrosive and alkaline/base. It's important to maintain a blood PH level between 7.35 and 7.45 in order to have a healthy body. Alkalizing our bodies will heal us and balance our PH levels. Enjoy our recipe below!

Orange And Mango Spring Salad

Today marks the first day of Spring! In celebration of this new season we created a recipe for Orange And Mango Salad with Hemp seeds. Organic oranges contain over 170 different phytonutrients. The nutrients and high amount of anti-oxidants found in oranges help protect from damages by free radicals and stimulates white blood cells (to fight infection) and digestive juices (to relieve constipation). Hemp seeds contain protein that is easily digestible and contain Omega-3 fatty acids which are considered essential for human health. Enjoy the recipe below!

Avocado Soup With Cucumber

Avocados provide all 18 essential amino acids that the body requires to form protein. They contain antioxidants, anti-inflammatory nutrients and beneficial fats that protect the body against damage caused by free radicals. Fresh extracts from cucumbers have been shown to have both antioxidant and anti-inflammatory properties. Our latest soup recipe is thick Avocado soup with Cucumber. This is a simple raw food recipe with plenty of greens, so you'll be getting rich sources of vitamins and nutrients such as calcium, magnesium, potassium, iron, vitamin B6, vitamin C, vitamin A, and vitamin K. Green Curry With Turnip 'Rice' And Lentils

Some of our raw dinners contain one or two cooked elements/ingredients that gets predigested with the enzymes raw foods provides. We do not eat anything cooked without adding a sufficient amount of enzymes to predigest the food. Last week we didn't have cauliflower for cauliflower 'rice', so we decided to try out 'turnip' rice, with some green curry sauce made with raw coconut milk.
Turnips enhance blood purification. They are high in vitamin K and have antioxidant and anti-inflammatory benefits. Lentils are high in folic acid which allows for cellular growth and DNA repair. Coconut meat has enzymes, so we didn't heat it after we prepared our home made coconut milk. This recipe is served at room temperature but is very tasty! Give it a try. Enjoy!

Zucchini 'Pasta' With Pesto Sauce - Raw

Zucchini 'pasta' provides an excellent source of antioxidants that protect our cells from damage, caused by free radicals. It is a healthier alternative to grain pasta, since it is not cooked. It will provide you with live enzymes, that predigest food, so you don't waste metabolic enzymes that are needed for rebuilding healthy cells. We learned about 'Zucchini Pasta With Basil Pesto Sauce' from Dr. Bergman's video on 'enzymes'. We added nuts to our recipe, but it is optional to use if you decide to try it out. This was our first time trying homemade basil pesto sauce. It tasted amazing and is also very nutritional and live with enzymes. Basil is an excellent blood cleanser and contributes to healthier liver function. Give it a try! See recipe below.

Homemade Tomato Sauce - Raw

Lycopene, found in tomatoes and beta-carotene found in carrots, are two of the chief carotenoids that help prevent strokes due to it's antioxidant properties. For our latest raw food recipe, we created a 100% raw tomato sauce, which can be incorporated in a variety of foods and aid in the predigestion of cooked foods. Raw garlic activates enzymes in the liver that help flush out toxins from your body! Because raw garlic is too strong in flavor, we came up with a couple of methods to tolerate raw garlic in raw foods. Both garlic and onions need a sitting time of 5-10 minutes minimum in order to gain their nutrients whether cooked or raw. When you thinly slice garlic and let it sit for a minimum of 15 minutes, it is also milder in flavor if eaten raw. See recipe below. This recipe is packed with flavor and enzymes! Enjoy!

Carrot Soup With Ginger

The benefits of ginger include anti-fungal and anti-inflammatory properties. It also helps reduce symptoms of nausea and vomiting and promotes healthy sweating that assists in detoxification. 
We love soup broth with ginger, so we incorporated it into our carrot soup recipe. It's now been almost two weeks that we began our grain free and 80-90% raw food diet. We're taking in raw food enzymes before we eat any cooked/steamed vegetables to assist in digestion. Today, we ate some sprouted mung beans before having our soup, to help provide us with the nutrition the Carrot Soup With Ginger had to offer. See recipe below. Enjoy!

Ice Cream 'Cannoli' - Raw

For our latest raw dessert, we made Ice Cream 'Cannoli' topped with a 'caramel' sauce made of raw organic honey. Raw honey predigests food! It has a significant amount of plant amyalse which does not come from the bee, but from the pollen of the flowers. You can predigest food when you eat raw honey, and the more you chew, the more digestion takes place. Check out our recipe below for the 'cannoli' shell and assembly process. Enjoy!

Fermenting Cabbage with Basil

It is important to have pro-biotics after the use of antibiotics, although antibiotics should always be avoided! Fermented vegetables create pro-biotics which are beneficial for the immune system because it provides healthy bacteria to the gut flora which can fight against bacteria, viruses and 'diseases'! Fermenting foods is really simple to do. A while ago, we began fermenting some green cabbage with leeks, celery and a hint of basil. Our indoor cherry tomato plants had been growing really slow since we planted them a few months ago. Growing indoor vegetables and herbs is challenging, but rewarding with a little patience. We were concerned about their growth so we went to get some advice. After visiting an indoor gardening supply shop, we purchased another grow light and some vitamins/nutrition for our cherry tomato plants. We replanted them into larger pots, added some new soil with vitamins and since then, it has made a dramatic difference. Our tomato plants are now flowering and it's just a matter of time that we begin to pollinate and see our first cherry tomatoes emerge!
A few weeks ago, we also purchased a small potted basil plant from our organic delivery service and we split the plant in two. We also cloned it to start a third plant and the results are looking good so far!

Green Peas and Corn With Cauliflower 'Rice'

Cauliflower is an excellent alternative to rice (grain) and can be served raw. Cauliflower has antioxidants, anti-inflammatory benefits and improves digestion. For our 'raw' dinner last night, we steamed some healthy organic green peas and spinach that we added to a raw cauliflower 'rice' mix that included raw corn, raw (pre-soaked) pumpkin seeds and fresh basil from our indoor basil plant. Watermelon Rind Juice

Watermelons are very nutritious and helpful for cleansing our bodies. For years, we only ate the red part of the watermelon but we recently discovered that this important fruit is completely edible! The rind holds the most nutrients and contains chlorophyll. Chlorophyll has the power to regenerate our bodies, fight infection and promote the health of the circulatory and digestive system. It also reduces the binding of carcinogens to DNA in the liver and other organs. Try out this simple juice recipe below!

Raw Avocado And Corn Soup

As part of our raw menu this week, we created a simple 'Avocado And Corn Soup' recipe that is served cold. For the broth, we boiled some water with vegetables (including the corn cob for flavor). Once ready, we discarded the cooked vegetables and allowed the broth to cool down completely before adding our raw sweet corn and avocado with more raw vegetables! When you boil vegetables, the nutrition is transferred to the water so we were able to get additional health benefits from the broth. See recipe below and check out our previous Avocado Soup recipe. Butternut Squash Filled Cabbage Rolls

Butternut squash provides about one-third of the Daily Value of vitamin C in every cup. It's orange color indicates an abundance of nutrients known as carotenoids, that are shown to protect against heart disease.  
Red cabbage has an excellent source of antioxidants and has more nutritional benefits than green cabbage. We love the taste of oven baked red cabbage and fermented red cabbage! Simple Vegetarian 'Meatloaf'

Until we decide to go on a grain free diet, we are pre-soaking our rice and lentils for 24 hours prior to cooking. Pre-soaking grains, seeds and nuts releases enzymes that are needed for digesting. Even though we still have grains in our diet we make sure to have a good portion of raw foods daily. Our recipes always consist of raw and cooked foods or simply raw! Our latest recipe is Vegetarian 'Meatloaf'. We cooked our gluten free brown rice and lentils with some vegetables and topped it off with a new tasty raw tomato sauce! Spicy Kale and Mushroom 'Cannelloni'

For our brunch, we prepared a dairy free and  grain free 'cannelloni', made with free range happy chicken eggs instead of pasta. Cannelloni is another one of our favorite pastas. This new recipe is very tasty with a touch of spice! The egg cannelloni is stuffed with fried onions, garlic, oyster mushrooms, raw pumpkin seeds and raw kale*. We topped it off with a spicy raw tomato sauce. Raw foods contain enzymes needed for a healthy immune system! See recipe below. Enjoy!

Yam Gnocchi With Kale

If you love gnocchi but are on a grain free diet, this new recipe is worth a try. The gnocchi is not cooked in water because we used coconut flour, which would break apart in water. We decided to fry them in a tasty rosemary, garlic and shallot butter. We also added raw kale with a side of tomato beet sauce that brought the dish together really well. Kale is high in vitamin A, vitamin C and vitamin K. Vitamin K is a key nutrient in regulating our body's inflammatory process. See recipe below. Enjoy!
